Michael’s, opened by Michael McCarty, became a key restaurant for modern California cooking in Los Angeles. Its kitchen trained future notable chefs (including Roy Yamaguchi), spreading a style that mixed fine-dining technique with diverse influences and a relaxed Southern California setting.
A “California roll” was mentioned in the press in late 1979, reflecting the growing habit of adapting sushi to American tastes. Rolls using avocado and other familiar ingredients helped make sushi feel less intimidating and made hybrid sushi a mainstream idea in Southern California.
Wolfgang Puck opened Spago in West Hollywood and helped make “California cuisine” nationally visible. Its success showed that innovative, cross-cultural menus could attract a wide audience, encouraging chefs to experiment with Asian ingredients and ideas in high-profile settings.

California Pizza Kitchen (CPK) opened its first location in Beverly Hills and quickly popularized non-traditional toppings like BBQ chicken pizza. Chef Nobu Matsuhisa opened Matsuhisa in Beverly Hills, building a reputation for innovative dishes that blended Japanese cooking with influences developed in the Americas. The restaurant became a major Southern California reference point for upscale, contemporary Japanese fusion.
Kazunori Nozawa opened Sushi Nozawa in Studio City, focusing on traditional Edo-style sushi and an omakase model (a chef-selected meal). Even though it was not “fusion,” it raised standards and made Los Angeles a serious sushi city—an environment where fusion rolls and refined sushi could develop side by side.
Food & Wine named Nobu Matsuhisa among its “Best New Chefs,” giving wider national attention to a Los Angeles chef known for modern, cross-cultural Japanese cooking. This kind of media recognition helped turn California Asian fusion from a local trend into a model other regions copied.
Chefs Michael Mina and George Morrone opened Aqua in San Francisco, using seafood as a theme while mixing multiple culinary traditions on the same menu. The restaurant reflected a broader California shift toward flexible “fusion” thinking, where technique and ingredients could cross national lines more freely.
