The ship Kasato Maru arrived at the Port of Santos with 781 Japanese immigrants under contract to work mainly on coffee plantations in São Paulo state. This is widely treated as the start of continuous Japanese immigration to Brazil. Early food practices were largely home cooking shaped by what was available locally, setting up later Japanese-Brazilian culinary adaptation.
Japanese immigrants increasingly moved from rural plantation areas to São Paulo city and began settling in the Liberdade area. The neighborhood’s low rents and central location helped it grow into a hub for Japanese-Brazilian commerce. This shift supported the rise of small food businesses (shops, tofu makers, eateries) serving the community.
The Taisho Shogakko (Taisho Primary School) opened to educate children in the growing Japanese immigrant community. Institutions like schools helped stabilize community life in the neighborhood. A more settled community also made regular supply chains and routines for Japanese food and ingredients more feasible in São Paulo.
By the 1920s, the Conde de Sarzedas slope and nearby streets were a preferred area for Japanese residents leaving the countryside. As the community grew, Liberdade developed stores and restaurants that made Japanese food more visible in the city. This period marks the transition from mostly private household cooking to a stronger neighborhood food economy.
After Brazil severed diplomatic ties with Axis nations in January 1942, authorities imposed restrictions on Japanese residents, including limits on public use of the Japanese language and on gatherings and movement. These policies pressured Japanese-Brazilians to reduce public cultural expression. In everyday life, this disrupted community institutions and could push foodways further into private, family settings.
After World War II, community life and institutions gradually rebuilt, supporting renewed cultural activity and businesses. Over the following decades, São Paulo became home to the largest Japanese diaspora in any single city. A larger, more established population increased demand for Japanese ingredients, restaurants, and Japanese-Brazilian food adaptations.
By the early 1970s, Liberdade’s business district already included many restaurants and shops selling “oriental” goods, reflecting a broader East Asian commercial identity. This created a public setting where Japanese-Brazilian food was eaten outside the home and encountered by non-Japanese visitors. It also positioned Liberdade as a key marketplace for ingredients needed for fusion cooking.
A large red torii (a traditional Japanese gateway) was installed as a landmark at Liberdade, reinforcing the neighborhood’s identity as a Japanese-Brazilian cultural center. The symbol helped make the area a destination for visitors and shoppers. Increased foot traffic supported restaurants and specialty food stores that would later help spread Japanese-Brazilian tastes citywide.
The São Paulo Metro’s Liberdade station (now Japão–Liberdade) opened, improving access to the neighborhood. Better transportation supported the area’s growth as a shopping and dining destination beyond the local community. This mattered for cuisine because it widened the customer base for Japanese and Japanese-Brazilian eateries in Liberdade.
By the 1980s, Japanese cuisine began attracting more interest beyond the Japanese-Brazilian community, moving toward mainstream consumption. This shift increased restaurant openings and encouraged menu changes to match local preferences. The stage was set for distinctly Brazilian versions of sushi and related foods, rather than strict reproductions of Japanese originals.
In the 1980s, “Nikkei cuisine” became recognized in Peru as a Japanese-Peruvian fusion tradition. While São Paulo’s Japanese-Brazilian food had its own history, the growing visibility of Nikkei as a culinary label helped frame Japanese-Latin American fusion as a legitimate cuisine style. This wider Latin American context later supported cross-border influences and experimentation in São Paulo’s Japanese restaurants.
During the 1990s, Japanese restaurants became available across São Paulo, not only in Liberdade. Wider distribution encouraged more experimentation with ingredients and presentation to suit Brazilian diners. This period marks a clear shift from a neighborhood-based immigrant cuisine to a citywide restaurant scene shaped by Japanese-Brazilian identities.
In the early 1990s, São Paulo saw the rise of temakerias—restaurants specializing in temaki (hand rolls) using a fast-food-style model. One account identifies Temaki Bar opening in São Paulo in 1992 as the first temakeria. This format helped make Japanese-style food cheaper, quicker, and more accessible, accelerating the spread of Japanese-Brazilian fusion tastes.
By 2000, São Paulo’s Japanese-Brazilian cuisine had moved from early immigrant adaptation to a mature urban food culture—rooted in Liberdade but consumed across the city. Restaurants, specialty markets, and new fast-casual formats helped normalize Japanese flavors and techniques in everyday eating. The result was a lasting fusion tradition in São Paulo that linked Japanese heritage with Brazilian ingredients, preferences, and dining habits.
