Spain created the Casa de Contratación in Seville to regulate and tax voyages and commerce with its American colonies. After the fall of Tenochtitlan, Spanish colonial rule expanded across Mesoamerica and began redirecting existing cacao-growing regions into imperial systems of tribute, labor, and commerce. Cacao was already socially important and widely traded in Indigenous economies, and colonization changed who controlled its production and where its value flowed. This set the stage for cacao to become a transatlantic commodity.
A widely cited early record places chocolate at the Spanish court in 1544, when Dominican friars brought Maya nobles and gifts to Prince Philip in Spain, including containers of prepared (beaten) chocolate. This mattered because it marks chocolate’s move from regional American practice into elite European settings. Early European interest was closely tied to diplomacy, religion, and courtly display.
The Soconusco region (in present-day Chiapas) drew Spanish attention because its cacao was valuable and already integrated into long-distance trade. Colonial demand encouraged continued cultivation, while also pulling local communities into wider colonial markets. Control over such producing regions supported the steady supply needed for a growing chocolate culture in New Spain and, eventually, Europe.
A frequently cited milestone is 1585, when a recorded shipment of cacao beans reached Seville from Veracruz. This matters because it signals cacao moving beyond occasional samples into more regularized, documentable commerce. From this point, Spanish Atlantic logistics could support sustained supply for Iberian consumers.
Chocolate was introduced into elite French court culture around 1615, linked to the marriage of Louis XIII and Anne of Austria in Bayonne. Court adoption mattered because it framed chocolate as a high-status drink associated with diplomacy, luxury goods, and aristocratic taste. From France, the fashion for chocolate could spread through other European courts and cities.
In 1631, physician Antonio Colmenero de Ledesma published Curioso tratado de la naturaleza y calidad del chocolate in Madrid. The work helped standardize European knowledge of how chocolate was prepared and argued for its medicinal qualities, reflecting how many Europeans first accepted chocolate as a healthful drink. Printed treatises like this helped chocolate travel through texts as well as through trade.
In 1652, an English translation of Colmenero’s chocolate treatise—Chocolate: or, An Indian Drinke—was printed in London. By presenting chocolate as both pleasurable and medicinal, it helped English readers understand and adopt a Spanish-American beverage. Print culture supported demand by explaining ingredients, preparation methods, and claimed health effects.
A London newspaper advertisement from 1657 is often cited as the first recorded notice of chocolate for sale in England, offering an “excellent” chocolate drink in Bishopsgate Street. This shows chocolate shifting from elite circles and imported novelty into a retail product. The public sale also hints at growing supply chains able to stock specialty shops.
As chocolate spread, Europeans argued over its medical value and even whether it broke religious fasting rules. These disputes mattered because they influenced who drank chocolate, when they drank it, and how openly it could be served in public or at court. Over time, wider acceptance supported expanding demand for colonial cacao and sugar.
The Treaty of Utrecht (1713) granted Britain the asiento (a contract to supply enslaved Africans) and the right to send one licensed ship annually (the navío de permiso) to trade with Spanish America. Although not a “cacao treaty,” these arrangements created new pressure points in Spain’s tightly controlled Atlantic system and encouraged both legal trade and smuggling. This changed the competitive environment around Spanish colonial commodities, including cacao.
In 1728, Spain chartered the Royal Guipuzcoan Company of Caracas, granting it strong privileges in Venezuelan trade with the goal of curbing contraband and redirecting cacao exports through authorized channels. This was a major turning point because Venezuelan cacao became increasingly central to Spanish supply for European chocolate consumption. The company’s monopoly structure also tied cacao production more closely to imperial regulation and coastal enforcement.
By 1730, the Guipuzcoan Company was actively operating with ships and armed capacity, aiming to enforce its trading privileges. Sources describe resistance among local Venezuelan elites and producers, reflecting how monopoly pricing and enforcement could provoke unrest. These tensions show that the chocolate trade was not just about taste and fashion—it depended on contested power in colonial economies.
By around 1750, chocolate had moved from a rare court novelty toward a more established drink in European cities, supported by expanding colonial supply networks. Spanish Atlantic controls, the growth of cacao exports (especially from Venezuela), and the spread of recipes and retail helped make chocolate part of everyday elite—and increasingly urban—food culture. This period closes the “New Spain to Europe” story arc as cacao becomes a durable commodity linking American cultivation to European consumption.
