Kikunoi—an influential Kyoto kaiseki house—expanded beyond a single main restaurant by operating additional venues such as Kikunoi Roan. Adding multiple locations helped demonstrate how kaiseki brands could modernize operations while maintaining seasonal menus and traditional course structure. It also created more “entry points” for visitors and younger diners to experience kaiseki in different settings.
In 1994, the first Nobu opened in New York City, pairing Japanese techniques and ingredients with flavors influenced by Nobu Matsuhisa’s time in Peru. While not a traditional kaiseki restaurant, its success made “modern Japanese fine dining” widely visible to international diners, investors, and the media. That visibility helped create market demand for Japanese tasting-menu experiences, including kaiseki-style dining abroad.
Nihonryori Ryugin opened in Tokyo in 2003 under chef Seiji Yamamoto. In 2011, Brushstroke opened in New York City as a dedicated kaiseki restaurant, bringing a more formal Japanese multi-course model into a major U.S. fine-dining market. Its operation showed the practical challenges of exporting kaiseki: sourcing seasonal ingredients, training staff in specialized service, and explaining course logic to new audiences. It also helped establish a broader “kaiseki vocabulary” in American dining culture.
Ryugin’s upgrade to three Michelin stars signaled that modernized, technique-forward Japanese tasting menus could be judged at the highest level in global fine dining. The recognition also increased international curiosity about how “traditional” multi-course forms like kaiseki could evolve without losing their seasonal logic. Awards and rankings became a major driver of culinary tourism and chef exchanges.
In the 2010s, Yamamoto opened Ryugin-linked restaurants outside Japan (including in Hong Kong and Taipei). These moves illustrated how a kaiseki-influenced restaurant could adapt to new markets while keeping core elements like seasonality and multi-course pacing. Overseas expansion also increased cross-border chef networks and ingredient supply chains tied to Japanese fine dining.
In 2013, the inaugural Asia’s 50 Best Restaurants list ranked Tokyo’s Narisawa at No. 1 and Ryugin at No. 2. The list offered a high-profile, media-friendly alternative to Michelin and helped shape international travel to “must-try” restaurants. This further globalized interest in Japanese multi-course dining, including both classical kaiseki and modern interpretations.
In December 2013, UNESCO added washoku (traditional Japanese cuisine) to its Intangible Cultural Heritage list. The designation reinforced the idea that Japanese foodways include cultural practices such as seasonality, presentation, and social customs—core values also central to kaiseki. After 2013, many tourism and media narratives increasingly framed kaiseki as both luxury dining and cultural heritage.
Brushstroke closed in 2018 after operating for several years in Manhattan. The closure underscored a recurring reality for kaiseki outside Japan: high fixed costs, limited seating, labor-intensive service, and vulnerability to rent increases. These pressures influenced how later kaiseki restaurants abroad designed smaller counters, simplified room layouts, and used reservation systems to manage costs.
In 2023, Copenhagen’s Noma ran a major pop-up in Kyoto, drawing international attention to Japanese ingredients, artisans, and local culinary practices. This kind of high-profile residency signaled that influence was not one-way: global “innovation” restaurants increasingly treated Japan—and traditions connected to kaiseki—as a source for technique, aesthetics, and ingredient philosophy. The event also reinforced Kyoto’s role as a global reference point for refined multi-course dining.
By the mid-2020s, kaiseki restaurants in New York and other major cities increasingly operated as small, reservation-driven tasting counters. This model reflects lessons from earlier experiments: keep seat counts low, control pacing, and communicate seasonality and course purpose clearly to international diners. The result is a more durable global niche for kaiseki—often blending classic structure with local sourcing and modern service logistics.
