After years of renovating a rundown Yountville building, Sally and Don Schmitt opened The French Laundry and built its reputation on a fixed-price dinner that changed daily. The restaurant’s early emphasis on local ingredients and an all-California wine focus helped shape what later became known as California cuisine.
Thomas Keller bought The French Laundry in 1994, taking over a small, already admired Napa Valley restaurant and aiming to build it into a destination for highly refined cooking and hospitality. This ownership change set the stage for the restaurant’s national influence during the next two decades.
In 1997, Keller won the James Beard Award for Outstanding Chef while leading The French Laundry. The award signaled that a Napa Valley restaurant could compete at the highest national level and helped cement Keller’s status within New American fine dining.
Keller expanded his Yountville presence by opening Bouchon in 1998, a French bistro-style restaurant. The move broadened his culinary footprint beyond tasting-menu fine dining and helped build a small “restaurant ecosystem” around The French Laundry.
In 1999, Keller released The French Laundry Cookbook, documenting the restaurant’s approach to technique, ingredients, and presentation. The book helped spread the restaurant’s methods and standards far beyond Napa, influencing chefs and serious home cooks.
In 2000, The French Laundry Cookbook received the International Association of Culinary Professionals (IACP) Cookbook of the Year honor. This recognition reinforced the idea that the restaurant’s style—precise, ingredient-driven, and highly structured—was a leading model in contemporary American fine dining.
In 2003, The French Laundry was voted No. 1 on The World’s 50 Best Restaurants list (and it repeated in 2004). These rankings increased international attention on Napa Valley and helped position contemporary American fine dining as globally significant.
Keller opened Per Se in February 2004, bringing his high-end tasting-menu approach to Manhattan. The New York opening showed that the “French Laundry standard” could be replicated in another city, strengthening Keller’s influence on New American luxury dining.
In September 2006, Keller opened Ad Hoc in Yountville, initially as a temporary project focused on family-style American comfort food. Its success highlighted Keller’s range and showed how top-tier fine-dining teams could also apply discipline and care to simpler, more approachable meals.
With Michelin’s first San Francisco Bay Area guide, The French Laundry received three stars—Michelin’s top rating—in 2006. The rating formalized the restaurant’s standing as a rare “special journey” destination and added another powerful signal of excellence for diners worldwide.
In October 2011, The French Laundry ran a short pop-up at Harrods in London, aiming to recreate key parts of its Napa experience. The project reflected how destination fine dining had become “portable” as a brand—capable of being staged internationally while still emphasizing precision and service culture.
In late December 2014, The French Laundry shut down its kitchen for a major rebuild and expansion, part of a long-term effort to modernize operations without changing the dining rooms’ character. The closure marked a turning point: maintaining a world-leading restaurant required major investment in back-of-house infrastructure.
In February 2017, The French Laundry began operating in its newly rebuilt kitchen, designed to improve workflow, acoustics, and cleanliness while supporting the restaurant’s demanding style of cooking. The renovation (spanning 2014–2017) demonstrated how contemporary fine dining increasingly depends on purpose-built design as much as culinary technique.
